Barbecue Beans on Chips

Instead of opening a tin of barbecue beans, make your own with this simple recipe, ideal for a tasty brunch or snack.

SERVES 2

Prep/cook time: 30 mins

16–20 frozen oven chips

2 teaspoons olive oil

1 small onion, finely chopped

300 ml/½ pint passata

1 tablespoon tomato ketchup

1 tablespoon brown sauce

1 tablespoon American or English mustard

1 tablespoon Worcestershire sauce

2 teaspoons honey or dark soft brown sugar

1 x 400 g/14 oz tin cannellini beans in water, drained and rinsed

To Serve

Grated Cheddar cheese

Preheat the oven to 220°C/Gas Mark 7. Spread the chips out on a non-stick baking tray and bake in the oven for 20–25 minutes, turning once, until golden and crispy.

Meanwhile, heat the oil in a medium saucepan, add the onion and cook over a medium heat for 2–3 minutes, stirring occasionally, until softened.

Stir in all the remaining ingredients, except the beans and cheese. Bring to the boil, then reduce the heat and stir in the beans. Partially cover with a lid and simmer for 10 minutes, stirring occasionally, until thickened.

Divide the chips between 2 plates, pour over the beans, then sprinkle over a little grated cheese. Serve immediately.
